Smashed meringue and lemon parfaits

This smashed meringue and lemon parfait recipe creates a quick, delicious dessert that's ready in a snap for a quick weeknight treat, and impressive enough to serve at your next dinner party

  • 300 millilitre cream
  • 4 tablespoon icing sugar
  • 2 teaspoon vanilla essence
  • 3/4 cup lemon honey or lemon curd
  • 250 gram mascarpone
  • 150 gram meringues, roughly smashed

    Beat the cream with the icing sugar and vanilla essence. Fold through the lemon honey and mascarpone, being careful not to overmix as you want a marbled effect.

    Into serving glasses, place a layer of the smashed meringues, followed by a layer of the lemon cream. Repeat the layers, finishing with whole or smashed meringues. Serve immediately.
