Slow sweet and sour chicken

- 2 tablespoon tomato sauce
- 3/4 cup cold water
- 1/2 cup white wine vinegar
- 2 tablespoon dark soy sauce
- 1/3 cup brown sugar
- 800 gram lean boneless, skinless chicken thighs
- 1/2 peeled fresh pineapple, cut in chunks
- 2 tablespoon cornflour
- 2 tablespoon water
Method
- 1Combine tomato sauce, water, vinegar, soy sauce and sugar in the bowl of a slow cooker. Stir in chicken pieces and cover.
- 2Cook on low for 8 hours or on high for 4 hours. Stir in the pineapple.
- 3In a small bowl, combine cornflour with second amount of water, then stir this into the chicken mixture.
- 4Cook on high, stirring often, for 20 minutes or until sauce is thickened. Serve with a steamed green vegetable such as snow peas, beans or asparagus.
