Tasty butter chicken just got a whole lot more tender with this melt in the mouth slow-cooker version of this popular curry.

Ingredients

Slow-cooked butter chicken and tomato
  • 1 large fresh chicken
  • 1/2 cup rice
  • 540 gram jar butter chicken simmer sauce, creamy tomato and butter flavour
  • 400 gram jar diced tomatoes
  • 1/4 cup chopped fresh coriander
  • 2 teaspoon grated lemon rind
  • 1/2 cup cashew nuts

Method

  • 1
    Cut chicken into eight equal portions. Place in the base of a slow cooker. Sprinkle over rice. Pour over butter chicken simmer sauce and diced tomatoes. Stir gently to combine. Cover and cook according to slow cooker directions.

    Serve with coriander, lemon rind and cashew nuts sprinkled over the top.
