Method

1.Preheat oven to 160°C/140°C fan forced.
2.Heat oil in a 1-litre (4-cup) flameproof and ovenproof dish over moderate heat. Add pork; cook for 2-3 minutes or until seared. Transfer pork to a heatproof plate.
3.Add onion, garlic, ginger and star anise to dish; cook and stir for 3 minutes. Return pork to dish.
4.Add stock, sherry, soy sauce and sugar. Bring to the boil. Cover with a tight- fitting lid. Bake tor 1 hour 45 minutes or until pork is very tender. Remove from oven. Stand for 5 minutes.
5.Meanwhile, place pumpkin in a large microwave-safe dish. Cover with plastic food wrap. Microwave on High (100%) for 4 minutes or until tender. Stand tor 3 minutes. Drain; return to dish. Add butter; season with salt and pepper. Mash until smooth.
6.Remove pork from dish. Slice pork thickly. Spoon pumpkin mash onto serving plates. Top with Asian greens and pork. Drizzle with cooking liquid. Serve.

Pork neck is a delicious cut, suitable for slow roasting or bruising. Star anise is available from delis, greengrocers and Asian grocery stores. If unavailable, you can use 1/2 teaspoon ground star anise. You can replace sherry with extra stock if preferred
