Ingredients
Skirt steak with balsamic mushrooms and olive polenta
- 500 gram skirt or oyster blade steaks
- 1 clove garlic, halved, plus one clove, crushed
- 1 tablespoon olive oil
- 250 gram button mushrooms
- 1/4 cup balsamic vinegar
- 1/4 cup chopped green olives
- 1 quantity basic creamy polenta
Method
Skirt steak with balsamic mushrooms and olive polenta
- 1Heat a large frying pan or char-grill on medium. Lightly oil and season steaks.
- 2Rub a halved garlic clove over and cook 2-3 minutes each side. Remove from pan and cover loosely with foil to rest.
- 3In the same pan, heat olive oil. Saute button mushrooms with crushed garlic clove 5-6 minutes, until golden. Stir balsamic vinegar through. Simmer, stirring, 1 minute, until reduced by half.
- 4Stir green olives through creamy polenta. Slice steaks and serve with polenta and mushrooms.
