Simple smoked salmon fettucine

This smoked salmon fettucine is a quick, easy and budget-friendly family meal that needs just 5 ingredients to take it from stove to dinner table

  • 500 gram fettuccine
  • 3 zucchini, thinly sliced
  • 4 clove garlic, crushed
  • 2 long red chillies, seeded, finely chopped
  • 185 gram hot-smoked salmon, flaked

    In a large saucepan of boiling salted water, cook fettuccine following packet instructions. Drain, reserving ¼ cup cooking liquid. Return pasta to pan.

    In a large frying pan, heat a little olive oil on medium. Sauté zucchini, garlic and chilli for 2-3 minutes until tender.

    Return to saucepan over medium heat. Add zucchini mixture and reserved pasta water. Cook for 1-2 minutes until liquid has evaporated and mixture is well combined.

    Gently fold salmon through. Season to taste. Serve with grated fresh parmesan, if desired.
