Shortbread stars
  • 2 cup plain flour
  • 1/3 cup pure icing sugar
  • 2 tablespoon rice flour
  • 250 gram butter, cubed, at room temperature
  • 30 chocolate buttons, to decorate
  • icing sugar, to dust

    Preheat oven to moderately slow, 160°C. Line 2 baking trays with baking paper.

    Sift together flour, icing sugar and rice flour into a bowl. Using fingertips, rub in butter until the mixture resembles breadcrumbs. Press together to form a firm dough.

    Turn out onto a floured surface. Knead gently. Roll out between 2 sheets baking paper until 5mm thin. Using a 5cm cutter, cut into stars. Arrange on prepared trays.

    Bake for 15-20 minutes until lightly golden. Cool for 5 minutes on trays. Transfer to a rack to cool completely. Decorate stars with chocolate buttons. Dust with icing sugar to serve. Store in an airtight container for up to 2 weeks.
