Shepherd’s pie in a jacket

Make your classic shepherd's pie more exciting with these potato jackets. Not only does it make your pie so easy to prepare and to serve up between plates, it's like eating little boats of deliciousness!

Ingredients

Method

1.Preheat oven to moderate, 180°C.
2.Place potatoes straight onto oven rack; bake 1 hour, until cooked through.
3.Meanwhile, heat oil in a saucepan on medium; cook onion 5 minutes, until softened. Add mince; cook, breaking up lumps with back of a spoon, 5 minutes, until cooked and brown.
4.Stir in sauce; cook 1 minute. Stir in stock and paste; cover and simmer 15 minutes. Remove lid; cook a further 5 minutes, until liquid has been absorbed. Season to taste.
5.Preheat an oven grill on high. Cut potatoes in half lengthways and scoop out flesh into a bowl, leaving a 1cm-layer of flesh on skin. Add milk and butter to bowl; season to taste and mash together.
6.Arrange potatoes, skin side down, in a baking dish; spoon in mince mixture. Top with mash; sprinkle with cheese. Grill 5-10 minutes, until cheese melts and filling is hot. Serve with beans.

Sebago potatoes are good for baking; their shape makes them ideal for stuffing and their floury texture is good for mashing. The potatoes can also be cooked in the microwave on high (100%) power 20 minutes.
