Method

1.Using a 7cm cookie cutter, cut a round from each slice of bread. Using the pulse button, process prawns, 2 green onions, egg white, cornflour, soy sauce and pepper in a food processor until smooth.
2.Place sesame seeds on a large plate. Spread prawn mixture evenly on bread rounds. Press bread, prawn-side down, on sesame seeds to coat evenly.
3.Heat oil in a large heavy-based saucepan over moderate heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry prawn toast, in batches, prawn-side down, 1 minute. Turn and cook, 30 seconds more, or until bread is crisp and lightly browned. Using a slotted spoon, transfer to paper towels. Serve sprinkled with remaining onion and sauce for dipping.

If preferred, you can make prawn toasts up to 2 hours ahead. Cover, then refrigerate. Reheat in a slow oven.
