This clever prawn cocktail recipe creates a rustic, serve-yourself-style meal that's perfect for fuss-free summer entertaining

Ingredients

Serve-yourself prawn cocktail
  • 4 slice pancetta
  • 1 baby cos lettuce, leaves separated
  • 1 punnet cherry tomatoes, halved
  • 1 avocado, seeded, peeled, thinly sliced
  • 1/2 bunch watercress
  • 2 radish, finely sliced
  • 750 gram cooked king prawns, peeled, deveined, tails on
  • lemon wedges to serve
Sauce
  • 1/2 cup mayonnaise
  • 1/2 cup natural yoghurt
  • 2 tablespoon tomato sauce
  • juice of 1 lemon
  • 2 teaspoon horseradish cream

Method

    Preheat oven to moderate, 180°C. Line an oven tray with baking paper.

    Place pancetta in a single layer on tray. Bake for 8-10 minutes until crisp.

    On a large platter, arrange lettuce leaves cup-side up. Top each leaf with cherry tomatoes, avocado, watercress and radish slices.

    Top with prawns and break over pancetta. Drizzle with sauce and season to taste. Accompany with lemon wedges.
Sauce

    In a bowl, whisk all the ingredients together. Season to taste.

Notes

  •  If preferred, you can build prawn cocktails in individual dishes or small cocktail glasses.
