Serve-yourself prawn cocktail
1.Preheat oven to moderate, 180°C. Line an oven tray with baking paper.
2.Place pancetta in a single layer on tray. Bake for 8-10 minutes until crisp.
3.On a large platter, arrange lettuce leaves cup-side up. Top each leaf with cherry tomatoes, avocado, watercress and radish slices.
4.Top with prawns and break over pancetta. Drizzle with sauce and season to taste. Accompany with lemon wedges.

5.In a bowl, whisk all the ingredients together. Season to taste.

-  If preferred, you can build prawn cocktails in individual dishes or small cocktail glasses.
