Seed and protein bars
These crispy, high-protein bars are also deliciously good for you. Packed with seeds, nuts and protein powder, they will give you such a kick of energy. Drizzle with dark chocolate for extra sweetness!

Ingredients
- 1 cup mixed seeds (eg linseed, sunflower seeds, pumpkin seeds, sesame seeds etc), plus 1-2 Tbsp extra seeds for decoration
- 1/2 cup mixed nuts, roughly chopped or blitzed
- 1/2 cup fine oats
- 1/2 tsp mixed spice
- 1 tbsp protein powder
- 6 medjool dates, soaked in boiling water
- 3 tbsp melted coconut oil
- 1 egg, lightly beaten
- 1/2 cup melted dark chocolate**
Method
- 1Preheat oven to 180°C. In a large bowl combine first five ingredients. Drain dates and mash with oil and egg, then stir thoroughly into seed mix.
- 2Press into a lined tin and bake for 15 minutes until just toasted. When cool drizzle with chocolate and sprinkle with extra seeds. When set, cut into bars.
Notes
**Check label if eating dairy free. You can make this very quickly in a food processor; just blitz the nuts first.
