Seafood laksa

Laksa is a fragrant, spicy noodle soup which generally includes coconut milk, shrimp paste, lemongrass, garlic, lime and palm sugar. To save preparation time, we’ve used a ready-made paste.

Method

1.Heat oil in a large saucepan, then add the laksa paste and fry for a 1-2 minutes over a medium heat until fragrant.
2.Add fish stock and coconut cream and bring to a simmer for 5 minutes.
3.Add the seafood and simmer for 2 minutes. Add vegetables and drained vermicelli, then simmer gently for 3-4 minutes until seafood is just cooked and vegetables are tender.
4.Spoon into bowls and top with chopped chilli, fresh coriander and crispy shallots.
