Method

1.Process basil, mint, coriander, dill, onion, capsicum, 1/2 cup of the oil and juice in a food processor until combined and almost smooth. Transfer to a bowl. Cover surface directly with plastic food wrap to prevent discolouring. Set aside.
2.Heat butter and half the remaining oil in a large frying pan over high heat. Cook scallops, in 2 batches, 30 seconds each side or until browned and almost cooked. Transfer to a plate.
3.Spoon 5 small dollops of salsa verde onto each plate. Top each dollop with a scallop and a little more salsa verde. Sprinkle with tomato and freshly ground black pepper. Serve drizzled with remaining oil.

Use a mix of just 2 herbs, such as mint and coriander.
