Ingredients
Savoury mince with polenta
- 1 tablespoon vegetable oil
- 1 medium brown onion, finely chopped
- 2 clove garlic, crushed
- 500 gram beef mince
- 2 400g cans chopped tomatoes with roasted capsicum
- 1/2 cup frozen peas
- 2 cup milk
- 3/4 cup instant polenta (cornmeal)
- 20 gram butter, chopped
- 1/2 cup finely grated pecorino cheese
- 75 gram baby spinach leaves, coarsely chopped
- 1/4 cup small basil leaves
Method
Savoury mince with polenta
- 1Heat oil in a large saucepan over moderately high heat. Add onion, garlic and mince; cook, stirring with a wooden spoon to break up lumps, for 7-8 minutes or until browned.
- 2Add tomato. Bring to the boil. Reduce heat. Simmer, uncovered, for 30 minutes or until sauce thickens, adding peas during the last 5 minutes.
- 3Bring milk and 2 cups water to the boil in a large saucepan over high heat. Add polenta in a thin steady stream, stirring constantly until combined. Reduce heat to low. Cook and stir for 5 minutes or until thick. Remove from heat. Stir in butter, pecorino and spinach.
- 4Spoon polenta into serving bowls. Top with mince. Serve mince sprinkled with basil.
