Method
1.In a bowl, combine eggs, cream or milk and chopped parsley.
2.Season to taste and whisk well. Soak 8 thick slices baguette in egg mixture for a few seconds each side.
3.Heat 15g butter in a frying pan on medium. When foaming, place the soaked bread in the pan.
4.Cook for 2-3 minutes each side until golden. Serve with maple syrup.
Make a sweet version by adding 1 tablespoon icing sugar and 1 teaspoon vanilla extract (in place of parsley). Cook and serve with vanilla ice-cream.
