Sausages with braised capsicum sauce
This quick and tasty dinner is perfect for a family weeknight meal. Beef sausages are grilled to perfection and served topped with this flavoursome braised capsicum sauce and crunchy, golden wedges.

Ingredients
Sausages with braised capsicum sauce
- 750 gram packet frozen potato wedges
- 8 thin beef sausages
- 2 tablespoon vegetable or olive oil
- 2 teaspoon sweet paprika
- 2 medium green capsicums, thinly sliced
- 400 gram can chopped tomatoes
- 4 green onions, thinly sliced
- salad leaves, to serve
Method
Sausages with braised capsicum sauce
- 1Preheat oven to 230°C (210°C fan-forced). Line a large baking tray with baking paper. Spread wedges evenly, in a single layer, over prepared tray. Bake 15 minutes, or until browned and cooked.
- 2Meanwhile, heat a large frying pan over moderately high heat. Add sausages. Cook, turning, 8 minutes, or until browned and cooked. Transfer to a heatproof plate. Cover to keep warm.
- 3Reduce heat to moderate. Heat oil in same pan. Add paprika and capsicum. Cook, stirring, 3 minutes, or until starting to soften. Add tomato; cover. Cook 5 minutes, or until reduced slightly. Stir in onion, until heated.
- 4Transfer sausages to serving plates. Spoon over capsicum braise. Serve with potato wedges and salad leaves.
Notes
To make your own wedges, cut 4 medium red-skinned potatoes into thin wedges; cooking time will vary.
