Method
1.In a large bowl, place capsicum, garlic and half the oil; toss to coat.
2.Preheat a chargrill pan or barbecue plate over moderately high heat. Add sausages and vegetables; cook and turn for 6-8 minutes, or until cooked. Transfer vegies to a large, heatproof bowl. Transfer sausages to a chopping board; thickly slice diagonally. Add sausages to vegies.
3.Lightly brush feta with a little of the remaining oil. Cook feta on same chargrill pan or barbecue plate for 30 seconds each side or until lightly browned. Transfer to bowl with vegetables. Add spinach, vinegar and remaining oil. Season. Gently toss, being careful not to break up feta, to combine. Serve warm.
Add eggplant, mushroom and fennel to salad, if liked. You can use pork or chicken sausages, if liked. Cook haloumi just before serving to avoid it becoming tough.
