Method
1.Preheat oven to moderate, 180°C. Line an oven tray with baking paper.
2.Arrange tomatoes on tray. Season and bake for 35-40 minutes until tender.
3.Place sausages on tray and bake with tomatoes for 15-20 minutes until cooked through. Cool and slice.
4.In a large bowl, whisk eggs and cream together. Stir sausage slices, spinach, cheese and onion through. Season and pour into a greased 10-cup baking dish.
5.Arrange tomatoes on top and bake for 35-40 minutes until set.
Note
- You can use frozen spinach – just thaw thoroughly first and squeeze out excess liquid. – For a change, swap some of the cheese with feta or grated parmesan.
