Method

1.Heat half the oil in a large frying pan over moderately high heat. Add sausages; cook and turn for 4-5 minutes or until browned. Transfer to a chopping board; Cut into 1cm-thick slices.
2.Return pan to moderate heat. Add remaining oil and onion; cook and stir for 4-5 minutes or until soft. Add paprika. Return sausages to pan; cook and stir for 5 minutes or until sausages are cooked.
3.Add tomato and peas; simmer, uncovered, for 3-4 minutes. Add couscous and 1/2 cup boiling water. Remove from heat. Cover pan; set aside for 5 minutes or until liquid is absorbed.
4.Using a fork, fluff and separate grains. Sprinkle with parsley and feta. Serve with bread and salad.
