Ingredients

Sausage, pea and feta couscous
  • 1 tablespoon vegetable or olive oil
  • 500 gram thin lamb sausages
  • 1 large red onion, thinly sliced
  • 2 teaspoon mild paprika
  • 400 gram can chopped tomatoes
  • 1 cup frozen peas, thawed
  • 1 1/4 cup couscous
  • 2 tablespoon chopped flat-leaf parsley
  • 100 gram feta, crumbled
  • crusty bread, to serve
  • mixed salad, to serve

Method

    Heat half the oil in a large frying pan over moderately high heat. Add sausages; cook and turn for 4-5 minutes or until browned. Transfer to a chopping board; Cut into 1cm-thick slices.

    Return pan to moderate heat. Add remaining oil and onion; cook and stir for 4-5 minutes or until soft. Add paprika. Return sausages to pan; cook and stir for 5 minutes or until sausages are cooked.

    Add tomato and peas; simmer, uncovered, for 3-4 minutes. Add couscous and 1/2 cup boiling water. Remove from heat. Cover pan; set aside for 5 minutes or until liquid is absorbed.

    Using a fork, fluff and separate grains. Sprinkle with parsley and feta. Serve with bread and salad.
