Sausage & potato baked omelette

This baked omelette will make a hearty start to your day. You can change it up with different meats, or try adding leftover roast vegetables and feta.

Method

1.Preheat the oven to 180°C. Heat the butter in an oven-proof pan. Add the onion, sausage slices and potatoes, then cook for 4-5 minutes until just golden and heated through.
2.Add the tomatoes and fresh thyme, tossing together.
3.Whisk the eggs and cream, then season well. Pour over the sausage mix and cook for 1 minute over a medium heat.
4.Transfer to the oven and cook for a further 5-8 minutes until puffed and golden.
5.Alternatively, cook the sausage and onion in a frying pan and transfer to a baking dish before pouring over the egg mix. Cook until set, golden and puffed – this method is good for a crowd.
