Sardine fritters
If you're looking to try something a little different, then give these fritters a go. They're made with good old-fashioned cans of sardines in oil and will on the table in 10 minutes flat! Also great as finger food at a party.

Ingredients
Sardine fritters
- 2 x 110g cans sardines in oil, drained, chopped
- 2 eggs, lightly beaten
- 1/2 cup (35g) fresh breadcrumbs
- 1/4 cup finely chopped parsley
- 2 tablespoon grated mozzarella
- 2 garlic cloves, crushed
- rice bran oil, to deep-fry
- lemon wedges, to serve
Method
Sardine fritters
- 1Combine sardines, egg, breadcrumbs, parsley, mozzarella and garlic in a large bowl and season to taste.
- 2Heat oil in a large saucepan, until a cube of bread sizzles on contact. Cook tablespoons of sardine mixture, in batches, for 1 minute each side or until crisp and golden. Drain on paper towel.
- 3Serve fritters with lemon wedges.
