Sardine and garlic breadcrumb spaghettini
- 400 gram spaghettini
- 1/4 cup (60ml) olive oil
- 2 110g cans sardines in springwater, drained
- 3/4 cup (50g) fresh breadcrumbs
- 3 clove garlic, crushed
- 1/2 teaspoon chilli flakes
- 1 tablespoon grated lemon zest
- 1/4 cup chopped parsley, plus extra leaves to serve
- 1/4 cup (20g) grated parmesan
Method
Sardine and garlic breadcrumb spaghettini
- 1Cook spaghettini in a large saucepan of boiling, salted water according to packet directions. Drain.
- 2Meanwhile, heat 1 tablespoon of oil in a frying pan on medium. Add sardines, toss gently, 2-3 minutes, until heated through. Remove from pan.
- 3Heat another tablespoon of oil in same pan and cook breadcrumbs, garlic and chilli, 1-2 minutes, stirring, until golden.
- 4Gently toss two-thirds of sardines with breadcrumb mixture, lemon rind, parsley, parmesan and remaining olive oil. Mix through spaghettini. Top with remaining sardines and parsley leaves to serve.
