Method
1.Melt butter in a small saucepan over moderate heat. Add sugar; cook and stir for 1 minute or until sugar dissolves. Add 1 cup of the cream; cook and stir for 2 minutes or until mixture comes to the boil. Transfer caramel mixture to a medium heatproof jug. Cool. Stir in 1/4 cup peanuts. Chill for 20 minutes. Reserve 1 tablespoon.
2.Using an electric mixer, beat remaining cream until soft peaks form. Stir in half the extra peanuts.
3.Pour peanut caramel into base of cones. Top each cone with a scoop of ice-cream. Drizzle with reserved caramel. Top with cream mixture. Sprinkle with remaining peanuts. Serve immediately.
Make a double batch of caramel sauce; it’s great to have on any ice-cream.
