Method
1.Place spice pepper and salt in a small frypan and toast on medium heat for 3-4 minutes or until fragrant. Crush with a mortar and pestle or in a small spice grinder until very fine. Stir through garam masala.
2.Place chicken in a shallow bowl and cover with spice mixture. Toss to coat. Using a vegetable peeler, cut zucchini lengthways into ribbon strips.
3.Preheat a barbecue or chargrill on high. Thread 1 piece chicken with 1 piece zucchini onto each skewer. Spray with cooking oil; cook for 5-7 minutes each side or until cooked through.
4.Meanwhile, make Dipping Sauce by combining all ingredients in a bowl. Serve skewers with salad, extra chilli and Dipping Sauce.
Chicken can be coated in spice mix in advance and chilled until required.
Note
