Method
1.Make salsa verde by combining parsley, gherkins, capers, oil, lemon rind, juice and garlic in a bowl using a fork. Season to taste.
2.Heat a non-stick frying pan on high. Add salmon, skin side down, and cook, 2-3 minutes each side, until cooked to your liking. Serve with salsa verde and steamed greens, if you like.
