Method

1.In a small saucepan combine the soy sauce, vinegar, sugar and ginger. Heat on low for 4-5 minutes, until syrupy. Set aside to cool.
2.Prepare rice noodles according to the packet instructions. Drain and place in a large bowl.
3.Add coriander leaves, green onion, chilli and soy mixture to the noodles. Toss to combine. Carefully mix the salmon through before serving.

Mint leaves and quartered cherry tomatoes are also delicious additions to this salad.
