Method
1.In a bowl, combine lentils, rocket, salami, tomatoes, olives and parsley.
2.For the dressing: In a jug, whisk all ingredients together. Season to taste.
3.Tear toasted bread into pieces. Toss through salad with dressing. Top with goat’s cheese and almonds. Serve with lemon wedges, if desired.
Note
- If preferred, bake bread in a moderate oven for 5 minutes. Cool and break into pieces.
