Salad tortillas with ricotta celery sticks
  • 4 flour tortillas
  • 1/2 cup low-fat mayonnaise
  • 100 gram mixed salad leaves
  • 1 carrot, grated
  • 1/2 green capsicum, seeded, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup ricotta
  • 1/2 bunch chives, finely chopped
  • 2 stalks celery, cut into 10cm lengths

Method

    Place tortillas on a bench. Spread mayonnaise over each. Top with salad leaves, carrot, capsicum and tomato. Roll up as tightly as possible. Wrap in plastic wrap and a napkin. Tie with string; pack into lunchbox.

    In a small bowl, combine ricotta and chives. Spread a little ricotta down centre of each piece of celery. Pack tortillas with celery sticks and a piece of fruit.
