Ingredients

Salad of fresh baby beans and peas
  • 600 gram baby green beans
  • 200 gram sugar snap peas, trimmed
  • 200 gram snow peas, trimmed
  • salt and pepper, to taste
  • 1 red onion (100g), sliced thinly
  • 1 stalk celery (150g), trimmed, sliced thinly
  • 1/4 cup coarsely chopped fresh flat-leaf parsley
Dressing
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon caster sugar
  • salt and pepper, to taste

Method

    To make dressing, combine ingredients in a screw-top jar, season to taste; shake well.

    Boil, steam or microwave the beans, sugar snap peas and snow peas, separately, until tender; drain. Rinse under cold water; drain.

    Combine beans, peas and dressing in a large bowl; toss gently, season to taste. Arrange on a platter, top with the combined onion, celery and parsley.
