Method

1.Preheat oven to 190°C (170°C fan-forced). Grease and line a 20cm ring pan.
2.Using an electric mixer, beat butter and sugar until pale and creamy. Add eggs, one at a time, beating well after each addition. Add rind. Fold through flour and juice alternately, beginning and ending with flour.
3.Pour into prepared pan. Bake for 30-35 minutes, until a skewer inserted comes out clean. Cool in pan for 5 minutes. Turn out onto a wire rack to cool.
4.To make icing, mix ingredients. Spread over cake. Top with rind to serve, if you like.
