Rocky road chocolate chunk cake

This indulgent recipe takes everyone's favourite, rocky road, and puts it in cake form. Serve as the perfect moreish treat for your next sweet occasion

Method

1.Preheat oven to moderate, 180°C. Lightly grease and line a 20cm square cake pan with baking paper.
2.In a large bowl, using an electric mixer, beat butter and brown sugar together until pale. Add eggs, one at a time, beating well after each. Add dark eating chocolate and beat well.
3.Fold combined sifted plain flour, cocoa, baking powder and baking soda into mixture, alternating with buttermilk, until just combined. Fold milk chocolate through. Spoon into pan, smoothing top. Bake for 40-45 minutes until cooked when tested.
4.Cool in pan. Gently remove cake from pan (keeping baking paper in place). Trim top of cake if needed, to level. Return cake and baking paper to pan.

5.In a heat-proof bowl over a saucepan of simmering water, combine milk and dark chocolate and butter until melted and smooth.
6.Fold marshmallows, Turkish delight and pistachios (reserve a little for top) through. Spoon over cake. Sprinkle with reserved pistachios and extra marshmallows. Chill for 2 hours until set.
