Rocket and tomato lamb burritos

A delicious light Mexican inspired meal for the whole family to enjoy putting together.

Rocket and tomato lamb burritos
  • 500 gram lamb mince
  • 35 gram packet taco seasoning mix
  • 400 gram canned crushed tomatoes
  • 425 gram canned mexican beans
  • 1/4 cup water
  • 1/2 small white onion (80g), chopped finely
  • 150 gram yellow cherry tomatoes, quartered
  • 1 clove crushed garlic
  • 1 fresh green chilli, chopped finely
  • 1/3 cup coarsely chopped fresh coriander
  • 4 x 20cm flour tortillas, warmed
  • 50 gram baby rocket leaves
  • 3/4 cup (90g) grated tasty cheese

    Cook lamb in a heated oiled pan; stirring for 5 minutes or until browned. Add seasoning mix, tomatoes, beans and the water to pan; boil then reduce heat to medium-low. Simmer, uncovered, for 10 minutes or until mixture thickens; season to taste.

    Combine onion, tomatoes, garlic, chilli and coriander in a small bowl.

    Divide lamb mixture between tortillas; top with rocket, tomato mixture and cheese. Season to taste. Fold tortilla to enclose filling.
