Roasted capsicum and sausage pizza
This colourful pizza makes skipping takeaways easier than ever. Topped with delicious sausage meat, capsicum and olives, not to mention lots of mozzarella, it's the perfect idea for a fun family dinner.

Ingredients
- 1 1/2 cups plain flour
- 1/2 sachet instant yeast
- 1 tsp sugar
- 1/2 tsp salt
- 2 1/2 tbsp extra virgin olive oil
- 3/4 cup warm water
- 3 sausages (herby, meaty ones)
- 3 capsicums, thinly sliced
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp chilli flakes
- salt and pepper
- 1/2 cup pitted black olives, sliced
- 1/4 cup marinated artichokes, drained and coarsely chopped
- 1 1/2 cups grated pizza cheese or mozzarella
- handful fresh basil leaves, shredded
Method
- 1Combine flour, yeast, sugar and salt in a bowl. Add ½ tablespoon of oil, then mix in the warm water to form a dough. Knead on a floured board until smooth and elastic. Place in a greased bowl, cover and microwave on low for 1 minute. Rest dough for 10 minutes, then repeat or leave dough in a warm place until doubled in size – about 40 minutes.
- 2Split skins of sausages with serrated knife and tip filling into a frying pan. Brown sausage meat, crumbling it with a masher as it cooks. Once browned, set aside. Thinly slice capsicums, and combine remaining oil, garlic, herbs and chilli flakes in a small bowl. Set aside.
- 3Preheat oven to 220°C. On a lightly floured bench, roll out dough to a circle about 33cm in diameter and transfer to a greased baking sheet. Pour over olive oil mixture and spread with the back of a spoon. Season with salt and pepper.
- 4Scatter on olives, artichokes and 1 cup of cheese. Top with crumbled sausage, capsicums and remaining ½ cup cheese.
- 5Bake 10-15 minutes until base is crisp and cooked. Top with basil if desired.
