Roast pork with spiced apple sauce

Roast pork
  • 2 kg, rind scored boneless rolled pork loin
  • 1 1/2 tablespoon olive oil
  • 1 1/2 tablespoon sea salt flakes
Spiced apple sauce
  • 4 peeled, cored, chopped granny smith apples
  • 1/2 cup water
  • 2 tablespoon sugar
  • 20 gram butter
  • 2 teaspoon lemon juice
  • 1 teaspoon mixed spice

    Preheat oven to very hot, 220°C. Weigh pork and calculate cooking time (allow 45 minutes per kilogram for pork loin with rind).

    Place pork on a rack in a baking dish. Drizzle with oil and rub salt onto pork. Bake for 20 minutes.

    Reduce temperature to moderate, 180°C, and bake a further 1 hour 10 minutes, until cooked to taste. Cover loosely with foil and rest 15 minutes.

    Serve apple sauce with sliced roast pork.
Apple sauce

    Meanwhile, combine all sauce ingredients in a small saucepan. Bring to boil on high, then reduce heat to low and simmer 10 minutes, until fruit is pulpy. Beat with a wooden spoon until smooth.


To save time, ask your butcher to score the rind and truss whole loin with string. For a crisper crackling, keep pork uncovered in fridge overnight, to dry out rind.
