Roast plums with honey and thyme
Sweet plums coated in caramelised honey and thyme create a delicious dessert.

Roast plums with honey and thyme
- 1/2 cup (110g) dark brown sugar
- 1/4 cup (90g) honey
- 60 gram unsalted butter
- good handful of thyme sprigs
- 12 medium, firm, ripe plums
- sour cream, to serve
Method
Roast plums with honey and thyme
- 1Preheat oven to 240°C. Combine sugar, honey, butter and thyme in an ovenproof non- stick frying pan on high. Cook for 4 minutes, stirring constantly, until butter melts and sugar dissolves.
- 2Add plums and cook, shaking pan, for 2 minutes. Transfer pan to oven. Roast 10 minutes, until caramel is dark brown. Cool for 10 minutes.
- 3If caramel is too thick, add 1-2 tablespoons water and heat on low. Arrange plums in glasses, spoon over slightly cooled caramel and top with sour cream.
