Method

1.Preheat oven to 240°C. Combine sugar, honey, butter and thyme in an ovenproof non- stick frying pan on high. Cook for 4 minutes, stirring constantly, until butter melts and sugar dissolves.
2.Add plums and cook, shaking pan, for 2 minutes. Transfer pan to oven. Roast 10 minutes, until caramel is dark brown. Cool for 10 minutes.
3.If caramel is too thick, add 1-2 tablespoons water and heat on low. Arrange plums in glasses, spoon over slightly cooled caramel and top with sour cream.
