Rio style rice

This recipe for cooking rice is delicious, flavourful and rather good as a comfort dish on its own

Ingredients

  • 2 tablespoon vegetable oil
  • 1/4 cup minced onion
  • 2 clove garlic, minced
  • 2 cup long-grain white rice
  • 1 teaspoon salt
  • 2 cup hot water
  • 2 cup hot chicken stock

Method

    Heat the oil in a saucepan over medium heat. Sauté the onion and garlic until translucent and only just beginning to brown.

    Add rice, salt, water and stock and stir. Turn heat to low, cover pan and cook until all the liquid has been absorbed and the rice is cooked (about 20 minutes).

Notes

-You can easily adapt this recipe to be vegetarian by replacing the chicken stock with vegetable stock.
