Ricotta and salami lasagne

Ingredients

  • 1 onion, finely chopped
  • 1 tablespoon olive oil
  • 80 gram sliced salami, chopped
  • 1 carrot, diced
  • 1 celery stalk, chopped
  • 575 gram jar red wine Bolognese pasta sauce
  • 2 tablespoon chopped basil, plus leaves to serve
  • 2 tablespoon parsley, chopped
  • 375 gram lasagne sheets
  • 400 gram soft ricotta
  • 1 1/2 cup grated mozzarella
White sauce
  • 60 gram butter, chopped
  • 1/4 cup plain flour
  • 2 cup milk
  • 2/3 cup grated parmesan

Method

    Preheat oven to 180°C. Lightly grease an 8-cup oven-proof dish.

    Sauté onion in oil for 2-3 minutes until tender. Add salami, carrot and celery, then cook for 4-5 minutes.

    Stir in sauce and herbs, then simmer for 10 minutes.

    For the white sauce: In a pot, melt butter. Add flour and cook, stirring, for 1 minute. Remove from heat and mix in milk. Cook, stirring, until thickened. Season. Remove from heat and stir in parmesan.

    Line dish with lasagne. Spread quarter salami mixture over, then quarter ricotta, half the white sauce and quarter mozzarella.

    Repeat lasagne, salami, ricotta and cheese layers. Finish with lasagne, white sauce and cheese.

    Bake for 40-45 minutes. Scatter with basil leaves to serve.
