Ingredients

Method

1.Place chocolate in a heatproof bowl. Place over saucepan of simmering water and stir until melted and smooth.
2.Remove from heat and stir in egg yolks, one at a time, until combined. Gently fold through cream, then coffee.
3.Whisk egg whites until soft peaks form and gently fold through chocolate mixture. Spoon into small glasses and refrigerate for 1 hour, until set.
4.Serve each mousse topped with raspberries.
