Rich chocolate mousse with raspberries
  • 220 gram dark chocolate, chopped
  • 4 eggs, separated
  • 1 cup (250ml) cream, lightly whipped
  • 2 tablespoon strong coffee
  • raspberries, to serve

Method

    Place chocolate in a heatproof bowl. Place over saucepan of simmering water and stir until melted and smooth.

    Remove from heat and stir in egg yolks, one at a time, until combined. Gently fold through cream, then coffee.

    Whisk egg whites until soft peaks form and gently fold through chocolate mixture. Spoon into small glasses and refrigerate for 1 hour, until set.

    Serve each mousse topped with raspberries.
