Rich and saucy sausage and bean stew

Hearty, comforting and budget-friendly, this sausage and bean stew recipe is the perfect mid-week winter meal. Serve with plenty of crusty bread to mop up this cumin, coriander and paprika-spiced dish

Method

1.Heat a large frying pan on high. Cook sausages for 3-5 minutes until golden, then remove from pan.
2.Wipe out pan with a paper towel and add olive oil. Heat on high, then sauté onion and garlic for 2-3 minutes until tender. Stir in spices and cook, stirring, for 1 minute.
3.Add capsicum and mushroom, then cook, stirring, for 2-3 minutes. Stir in tomatoes, beans, stock and wine.
4.Return sausages to pan and bring to the boil. Reduce heat and simmer for 10-15 minutes. Sprinkle stew with parsley and serve with crusty bread.
