Rhubarb, pear and apple crumble

Rhubarb, pear and apple crumble
  • 3 cup chopped rhubarb
  • 2 apples, peeled, cored, thinly sliced
  • 2 pears, peeled, cored, thinly sliced
  • 1/3 cup brown sugar
  • 2 tablespoon water
  • ice-cream, to serve
  • 1/2 cup plain flour
  • 1 teaspoon ground cinnamon
  • 60 gram cold butter, chopped
  • 1/2 cup rolled oats
  • 1/2 cup macadamias, chopped
  • 1/3 cup shredded coconut
  • 1/3 cup brown sugar

    Preheat oven to 180°C. Lightly grease 6 x 1-cup individual ovenproof dishes.

    In a large saucepan, combine rhubarb, apple, pears, sugar and water. Bring to boil. Reduce heat and simmer, stirring occasionally, for 8-10 minutes until tender. Spoon mixture into prepared dishes.

    To make crumble, sift flour and cinnamon together into a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Stir in oats, macadamias, coconut and sugar.

    Sprinkle over fruit mixture in each dish. Bake for 15-20 minutes until golden. Serve warm with ice-cream.


Try other combinations of fruit such as cherries, apples and pears, canned mixed fruit and rhubarb or mixed berries.
