Method

Red wine pears with chocolate crumble

1.In a medium saucepan, combine wine, sugar, bay leaf and cardamom. Stir on low heat until sugar dissolves. Bring to the boil. Reduce to a simmer and add pears. Cover surface with a sheet of baking paper, weighing down with a plate. Simmer gently for 25- 30 minutes.
2.Meanwhile, preheat oven to hot, 200°C. Lightly grease a shallow 6-cup ovenproof dish.
3.Transfer pears to dish with 1/4 cup of the cooking liquid.
4.Make Crumble using method below.
5.Bake for 25-30 minutes, until golden. Serve warm, with cream.

6.Sift flour into a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Stir in sugar, almonds and chocolate. Sprinkle evenly over fruit mixture.

If you’d like to make a sauce to accompany this crumble, simmer the leftover cooking liquid from the pears until it’s reduced by half and slightly syrupy.
