Method
1.Separate lettuce, reserving four whole leaves. Shred remaining lettuce leaves. Arrange shredded lettuce inside whole leaves. Top with grated beetroot and carrot, then sprinkle with nuts and seeds.
2.Place dressing ingredients in a small bowl and whisk to combine. Season with salt and pepper to taste. Serve dressing on the side, or drizzle over salad just before serving.
