Raw energy salad

Make this healthy salad for an easy, energy-packed lunch or dinner.

Raw energy salad
  • 1 small iceberg lettuce
  • 1 large beetroot, peeled and grated
  • 3 large carrots, peeled and grated
  • 1/2 cup walnut pieces
  • 1/2 cup sunflower seeds
  • 3 tablespoon sesame seeds
Avocado oil dressing
  • juice of 1 lemon
  • 1/4 cup avocado oil
  • salt and freshly ground black pepper

    Separate lettuce, reserving four whole leaves. Shred remaining lettuce leaves. Arrange shredded lettuce inside whole leaves. Top with grated beetroot and carrot, then sprinkle with nuts and seeds.

    Place dressing ingredients in a small bowl and whisk to combine. Season with salt and pepper to taste. Serve dressing on the side, or drizzle over salad just before serving.
