Raw energy salad

Ingredients
Raw energy salad
- 1 small iceberg lettuce
- 1 large beetroot, peeled and grated
- 3 large carrots, peeled and grated
- 1/2 cup walnut pieces
- 1/2 cup sunflower seeds
- 3 tablespoon sesame seeds
Avocado oil dressing
- juice of 1 lemon
- 1/4 cup avocado oil
- salt and freshly ground black pepper
Method
Raw energy salad
- 1Separate lettuce, reserving four whole leaves. Shred remaining lettuce leaves. Arrange shredded lettuce inside whole leaves. Top with grated beetroot and carrot, then sprinkle with nuts and seeds.
- 2Place dressing ingredients in a small bowl and whisk to combine. Season with salt and pepper to taste. Serve dressing on the side, or drizzle over salad just before serving.
