Raw chocolate brownies
- 1 cup almond meal (ground almonds)
- 1/2 cup cocoa powder, sifted
- 2 tablespoon low-gi sugar
- 2 cup large fresh pitted dates, chopped
- 2 tablespoon coconut oil
- 1/2 cup chopped walnuts
- 45 gram bar sugar-free 70% dark chocolate, finely chopped
- 1/4 cup moist shredded coconut
Method
Raw chocolate brownies
- 1Line base and sides of a shallow 18cm(base measurement) square cake pan with baking paper. Place almond meal, cocoa powder and sugar in a food processor; process until combined. Add dates and oil; process until mixture is combined and begins to form a ball.
- 2Transfer the date mixture to a bowl; stir in walnuts and chocolate. Using your hands, bring dough together. Press mixture evenly into prepared pan; level surface. Top with the coconut, pressing lightly into surface. Cover with plastic food wrap; chill for 2 hours or until firm. Cut into 16 squares to serve.
