Raspberry chocolate brownies
- 250 gram unsalted butter, chopped
- 200 gram good quality milk chocolate, chopped
- 4 eggs
- 1 cup (220g) firmly packed brown sugar
- 1 1/3 cup (200g) plain flour
- 1/2cup (50g) cocoa
- 1/4 teaspoon baking powder
- 200 gram fresh or frozen raspberries, plus extra to serve (optional)
Method
Raspberry chocolate brownies
- 1Preheat oven to 180°C or 160°C fan. Grease and line base and sides of a 19cm x 29cm slice pan.
- 2Place butter and chocolate in a small saucepan. Stir on low heat until melted and smooth. Set a side to cool slightly.
- 3Using an electric mixer, beat eggs until pale and fluffy. Gradually add brown sugar, beating constantly. Add chocolate mixture, beating constantly until well combined. Sift together flour, cocoa and baking powder. Add to chocolate mixture and stir to combine. Pour into prepared pan and smooth surface.
- 4Scatter over raspberries. Bake for 25-30 mins, until firm. Cool in pan.
