Method
1.Place frozen raspberries, acid, juice, sugar and water in a medium saucepan; bring to the boil. Reduce heat and simmer uncovered for about 5 minutes or until reduced slightly. Stir in rind.
2.Remove berry mixture from heat and strain into sterilised bottles. Seal immediately; refrigerate 3 hours or overnight.
3.To serve, pour â…“ cup cordial into a glass, top up with â…” cup iced water or chilled sparkling mineral water. Garnish with fresh raspberries and mint.
