Raspberry and macadamia nut blondies

The fairer cousin to a brownie, these white chocolate blondies are stuffed with raspberries and macadamia nuts.

Method

1.Preheat oven to 180°C. Lightly grease a 20cm x 30cm baking dish and line with baking paper.
2.Place butter and brown sugar in a large saucepan and cook over low heat until butter is melted. Remove and set aside to cool slightly.
3.Add eggs, one at a time, beating well between each addition. Add vanilla essence. Sift in flour, salt and baking powder. Mix until well combined. Stir through chocolate chips, raspberries and macadamia nuts.
4.Pour mixture into prepared pan and bake for 35 minutes. Cool slightly before turning out and cutting into squares.
