Rare roast beef with anchovy butter

Ingredients

Anchovy butter
  • 200 gram butter, softened
  • 4 shallots (100g), chopped finely
  • 1 tablespoon dijon mustard
  • 1 tablespoon finely chopped fresh tarragon
  • 5 drained anchovy fillets, chopped finely
  • 1 teaspoon sumac

  • 1/2 cup (125ml) barbecue sauce
  • 2 clove garlic, crushed
  • 1 tablespoon finely chopped fresh rosemary
  • 1/3 cup finely chopped fresh rosemary
  • 2 kilogram boneless beef sirloin
  • 300 gram yellow beans, trimmed
  • 300 gram green beans, trimmed
  • 800 gram button mushrooms
  • 2 tablespoon finely chopped fresh chives

    Preheat oven to 220°C.

    Make anchovy butter: Beat butter in medium bowl with electric mixer until soft; beat in remaining ingredients, season to taste. Form into log, roll in plastic wrap; refrigerate until firm.

    Combine sauce, garlic, rosemary and 2 tablespoons of the oil in small bowl; rub all over beef. Place beef on oiled wire rack over baking dish; pour in enough water to half fill the dish.

    Roast beef about 45 minutes or until cooked to your liking. Cover beef loosely with foil; stand 10 minutes before slicing thickly.

    Boil, steam or microwave beans until tender; drain.

    Heat remaining oil in large frying pan; cook mushrooms, stirring, over medium heat, until tender.

    Combine mushrooms, beans and chives in large bowl; season.

    Divide bean mixture among serving plates; top with beef and slices of anchovy butter.
