Rare roast beef with anchovy butter

Anchovy butter
- 200 gram butter, softened
- 4 shallots (100g), chopped finely
- 1 tablespoon dijon mustard
- 1 tablespoon finely chopped fresh tarragon
- 5 drained anchovy fillets, chopped finely
- 1 teaspoon sumac
Rare roast beef with anchovy butter
- 1/2 cup (125ml) barbecue sauce
- 2 clove garlic, crushed
- 1 tablespoon finely chopped fresh rosemary
- 1/3 cup finely chopped fresh rosemary
- 2 kilogram boneless beef sirloin
- 300 gram yellow beans, trimmed
- 300 gram green beans, trimmed
- 800 gram button mushrooms
- 2 tablespoon finely chopped fresh chives
Method
Rare roast beef with anchovy butter
- 1Preheat oven to 220°C.
- 2Make anchovy butter: Beat butter in medium bowl with electric mixer until soft; beat in remaining ingredients, season to taste. Form into log, roll in plastic wrap; refrigerate until firm.
- 3Combine sauce, garlic, rosemary and 2 tablespoons of the oil in small bowl; rub all over beef. Place beef on oiled wire rack over baking dish; pour in enough water to half fill the dish.
- 4Roast beef about 45 minutes or until cooked to your liking. Cover beef loosely with foil; stand 10 minutes before slicing thickly.
- 5Boil, steam or microwave beans until tender; drain.
- 6Heat remaining oil in large frying pan; cook mushrooms, stirring, over medium heat, until tender.
- 7Combine mushrooms, beans and chives in large bowl; season.
- 8Divide bean mixture among serving plates; top with beef and slices of anchovy butter.
