Method

Vegie pasta soup

1.In a large saucepan, combine soup and stock over moderately high heat. Bring to the boil. Add frozen vegies, then return to the boil. Reduce heat; simmer, stirring occasionally, for 5 minutes.
2.Meanwhile, in a large saucepan of boiling salted water, cook pasta for 5 minutes or until tender. Drain; divide pasta among large serving bowls.
3.Add spinach to soup. Cook and stir for 1-2 minutes or until just wilted. Ladle hot soup over pasta in bowls. Top with parmesan. Sprinkle with freshly ground black pepper. Serve at once.

You can use any favourite filled pasta. You can use any combination of frozen vegetables. You can cook this soap up to 2 days ahead. Add a little extra stock or water when reheating.
