Method

1.Preheat oven to 180°C. Line a 20cm-22cm springform tin, bottom and sides. This prevents the toffee from sticking!
2.Place the pastry lengthwise on a lightly floured surface.
3.Mix together ¾ cup brown sugar, cinnamon and the sultanas.
4.Brush the pastry with the melted butter and sprinkle over the brown sugar mix.
5.Roll into a log, brushing the edges with beaten egg to seal the roll.
6.With the seam-side down, glaze the log with the remaining beaten egg.
7.Sprinkle 2 tbsp of the brown sugar mixture in the bottom of the prepared tin.
8.Cut the log into eight even pieces and place in the tin, leaving room for the buns to expand. Sprinkle the top with the remaining brown sugar.
9.Bake until golden brown, puffed up and crispy – about 30 minutes. Place on a rack to cool.
10.For the icing, in a food processor combine the butter and cream cheese until smooth. Add the lemon juice, then gradually add the icing sugar, mixing until creamy.
11.Ice the cooled buns and top with fresh raspberries.
  • If the log feels too soft to cut cleanly, freeze for 30 minutes to firm before cutting
