Ingredients
Quick shepherd's pie
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 teaspoon minced garlic
- 2 cup frozen mixed vegetables
- 2 425g cans braised steak and onion
Topping
- 30 gram butter
- 1 leek, trimmed, washed, thinly sliced
- 475 gram tub fresh creamy mashed potato
- 1/2 cup grated tasty cheese
Method
Quick shepherd's pie
- 1Preheat oven to 200°C. Heat oil in a large frying pan on high. Saute onion and garlic for 1-2 minutes until tender.
- 2Add vegetables and cook, stirring, for 1-2 minutes. Mix in braised steak and onion and season to taste. Simmer for 3 minutes. Stir basil through.
- 3Spoon into four 1 1/2 cup oven-proof dishes (or 1 large casserole dish).
- 4Melt butter in a frying pan on high. Saute leek 4-5 minutes until tender. Remove from heat. Stir in potato. Spoon over meat in the oven-proof dishes and sprinkle with cheese. Bake for 15-20 minutes, until bubbling and golden.
Notes
We used frozen mixed vegetables containing peas, corn, beans and carrot.
